Banderillas (Tuna Skewers)


1 tbsp Don Carlos olive oil
250g raw Tuna
1 lemon
1 tbsp lemon juice
16 Don Carlos Capers
8 Don Carlos green olives

Makes 8


Soak eight wooden skewers in cold water for 1 hour to prevent them burning during cooking. Cut the raw tuna into 2 even sized cubes. Remove the zest from the lemon, avoiding the bitter white pith, and cut the zest into thin strips.

Combine the tuna, lemon zest, lemon juice and olive oil in a bowl.

Thread three pieces of tuna, two capers and one green olive into each skewer, alternating each ingredient, Put in a non metallic dish and pour the marinade over them. Cook under a hot grill turning to cook each side for 4 minutes, or until done to your liking.

The combination of olive oil and lemon juice gives a wonderful zesty flavour to the tuna. Perfect, for something light & healthy to enjoy on a hot summers day.
