Recipes: Starters

Battered prawns (can be enjoyed either as a starter or as part of a Tapas dish)


250 g prawns
150g flour
1 egg white
1 tbsp Don Carlos white wine vinegar
Don Carlos Olive Oil
Don Carlos Salt

Serves 4


Cook the unpeeled prawns in a pan with salted boiling water for 2 minutes. Allow to cool and strain the water through a sieve.

Mix the flour, vinegar and a little of the prawn water (which must be cold) in a shallow bowl and stir with a fork to form a smooth paste. Whisk the egg white until stiff and carefully fold into the mixture.

Peel the prawns, discard the heads and roll them in the batter mixture one by one. Fry them straight away in plenty of hot oil
When they are golden brown, remove from the pan and place them on kitchen paper to drain excess oil before serving them piping hot.

The olive oil really allows the fresh flavours of the prawns to come through. A Delicious light meal served with salad or as tapas with drinks.
