Mashed Potatoes with Chorizo


1kg potatoes peeled
2 bay leaves
2 cloves garlic
6 black peppercorns
Don Carlos sea salt
1 whole chorizo sausage chopped
8-10 slices bacon, cut into 2.5cm pieces
1 tbsp pimenton (Spanish paprika)
2-3 tbsp Don Carlos Pure Olive oil

Serves 4


Cut up potatoes, place in a pot, cover with water and add a pinch of salt. Add garlic cloves, peppercorns and bay leaf. Boil for about 20 minutes or until soft.

Meanwhile pour olive oil in a large frying pan, fry bacon and chopped chorizo until crispy. Remove from pan and reserve oil. Add pimenton to oil and heat until fragrant. Remove potatoes from cooking liquid and use a fork to mash them one by one into the oil mixture. If mashed Potatoes are too dry, add a little of the reserved oil!

The olive oil allows the flavours to combine perfectly together to give this dish a lovely authentic taste. This is a typical Spanish dish – the smokiness of the chorizo works really well with the mashed potato.
