Lemon Biscuits

Ingredients:

100g Plain Flour 
100g Sugar 
1/4 tsp Bicarbonate of Soda 
90ml Don Carlos Extra virgin Olive Oil 
2 tsp grated Lemon Zest 
3 drops Lemon Oil 
A squeeze of Lemon Juice

Method:
 
Preheat the oven to 180C, 350F, Gas Mark 4 and line 2-3 baking sheets with parchment paper.  

In a large mixing bowl, mix together the flour, sugar and bicarbonate of soda. In another bowl, mix all liquids together then add to the flour mixture, stirring until well blended.  

Using your hands, roll the dough into 2.5cm/1-inch balls then place the balls 5cm/2-inches apart on the lined baking sheets.

Bake for 15 minutes. Cool on wire

The olive oil helps to maintain the freshness of these light biscuits.
