Grilled Salmon with Asparagus

Ingredients:

I bunch asparagus spears
4 salmon portions
I tbsp Olive oil
Juice of half a lemon
Don Carlos fine sea salt
Freshly ground black pepper
2 tbsp of butter

Serves 4

Method:

Blanch the Asparagus tips in lightly salted boiling water for 2 minutes. Drain, Refresh under cold water and pat dry.

Brush the salmon with olive oil, sprinkle with some lemon juice and season with salt and pepper. Cook the fish on a very hot griddle pan or under a grill for 5 minutes in each side, depending on the thickness of the fish.

Melt the butter on a pan and gently reheat the asparagus for 1 -2 minutes before serving with the fish.

Optional: serve with mustard sauce.

This classic dish is full of healthy goodness to feed the brain and is so quick to make, perfect after a long days work. By brushing the Salmon with oil - it brings out the wonderfully rich flavour.
