Thick Gazpacho


100ml Don Carlos extra virgin olive oil
4 ripe tomatoes (peeled and coarsely chopped)
1 red pepper roasted and peeled and cut into strips
4 slices of Serrano ham (cut into very fine strips)
2 garlic cloves peeled
1 strand Saffron
1 tsp Don Carlos coarse sea salt
1 tsp ground pepper
1 tsp ground cumin
1 tbsp Don Carlos Sherry Vinegar
1 litre ice cold water

Serves 4


Put the salt, pepper, cumin, peeled garlic and saffron into a mortar and pound into a fine paste. Add the oil to the mortar followed by the vinegar and a little cold water. Place chopped tomatoes in a large bowl and stir in contents of mortar. Add ham strips and additional water, mix well.

Pour into bowls, garnish with red pepper. Then drizzle a little olive oil over the top.

A typical Spanish meal - best enjoyed in the summer.
